German ß rendered as SS in pdf documents

Hey, first of all thanks for your great Plugin, I use it daily to write letters in obsidian and export it to pdf letters.

Unfortunately the ß is rendered als SS and I don't know why.

The tex template has the ngerman package which should it make possible to render an ß. Also if I use pandoc directly via the terminal it all works correctly, but when I use the plugin everything is rendered completely the same besides this SS problem.

Update: if you restart Obsidian it works for the first export and the ß is correctly exported. For the second export it goes back to SS instead of ß.
