I made a quick search and found that: Google Scholar, DBLP, and Springer remove accents from letters in BibTeX files; while Elsevier and IEEE keep the accents.
Seems that converting to Latex format is indeed the best way. So I'll keep it as it is.
The correct codification for the refences.bib files must be defined according to their intended uses. Currently, we are (most of the time) using the codification for Latex, where Latin accented symbols are modified - this reduces search capabilities, but it is the best way for referencing in Latex files.
