docs: reflect new version of trusted issuer registry #94

This PR updates the trusted issuer registry section to reflect changes to that part of the architecture.

Note: There is going to be s subsequent PR that will add a PROD environment of the registry which will live on Ethereum mainnet. This also means that Statekeepers will have to use real ETH that have to be bought on that environment. All the environments I added in this PR are for testing purposes only.
