Actually, an update on this.
I did the following. 1) click on the folder, click properties and then Customize 2) change the icon to whatever. 3) If you've already got that Folder placed in the Start Menu in openShell, delete it. 4) Drag the folder onto OpenShell's start menu. Alternately, Right click the folder and select "Pin to Start (OpenShell)
Worked right off for me!

There's no direct function to change the folder icons within the start menu
UNLESS you manually one by one change each individual folder while also adjusting the permissions on each file to change the icon. Then Clear Icon Cache to see the changes

I would like the option within open shell to change the folder icon.

Changing each one by one which is very, very time consuming, and doesnt apply to new folders
