Here are some pure mechanics, not dressed up in fancy wording, which I think could be interesting. Many of them can be combined for some pretty cool interactions.

General:

Walls that separate players.
Shrinking arena space, limiting your movement.
"Free-floating objects" that bounce around and can be pushed by players, and either:
- does damage when colliding with player/boss or other objects
- gives buffs when colliding with players/boss or other objects
Minions that follow players around and do damage (e.g. radiance burn).
Minions that buffs, heals, or makes boss invulnerable while alive.
Push/Teleport players around.
Areas on ground that does damage.
Large AoE spells with small safe spots to stand on.
Players can affect the defense/damage ratio of boss (e.g. channeled damage boost that sacrifices defense, players can interrupt it). I.e. making the boss tanky but low damage, or squishy but high damage.
Time limit for killing boss. "Enrage timer".
Out-heal, or "out-survive" boss; e.g. boss does damage to itself and players.
Spell reflection; Damage spells on boss hurts allies, but healing spells on boss heals allies.
Player damage affected by player and boss health ratio (when boss is low hp, you deal more damage if you are also low hp).
Bad things happens when players are full hp, and boss tries to heal players. For example, when full hp (say, 95% or more):
- You loose maximum hp
- It costs mana, or lowers maximum mana
- Lowers stats, armor, magic defense, damage or movement speed
- Increase mana cost or cooldown of spells
- etc.
- Any of the above effects can be applied to allies instead of self
- Any of the above effects can instead be buffs to the boss
Boss imprisons player(s), whom must be helped by allies.
Link boss to player, or player to player, and either:
- taking damage or being healing affects both
- taking damage heals the other and being healed damages the other
Separate areas on the ground that heals and does damage respectively when standing on them.
Stacking buffs that increase damage but lowers defense.
Players gain opposite charge stacks (e.g. positive/negative). If a positive player meets a negative player, they take damage.

Interaction between two (or more) bosses simultaneously:

Bosses gains/looses power based on health difference between them.
Must be killed (roughly) at the same time.
Only one can be damaged at a time.
Shared health pool.
Health transfer between bosses; higher health gives more power, but leaves low health boss weaker.
One boss becomes "inactive" or a statue, and is vulnerable, but the other boss(es) defends.
Healer/Fighter boss combo, fighter defends healer.
Bosses be lured to damage each other.
