Docker compose v2 #11

The https://openc3.com/docs/v5/installation page has a link to install "docker compose" that takes you to the https://docs.docker.com/compose/install/ page that says that docker compose V1 support is stopping in June 2023. So there might be a need for some adjustments to that OpenC3 installation link to go straight to V2.

We've updated our scripts to support both versions.
