Convert to Quarto #304

And build to a new URL during the development of 2e. Once done, replace the URL so the original URL not points to 2e, and there's a note about 1e somewhere in preface.

create a 1e branch and deploy to https://openintro-ims.netlify.app/ so 1e content stays at the original link, for now, until 2e is officially done/published
make updates on main branch to quarto / 2e, and publish to a different URL like https://openintro-ims-2e.netlify.app/
move first edition to https://openintro-ims-1e.netlify.app/ after 2e is published

This is done except for the last two bullet points but I think we can close it for now.
