Update services to use Jakarta EE 10 and MicroProfile 6.0 features #132

Currently, the game service and leaderboard services use Jakarta EE 9.1 and MicroProfile 5.0 features, it would be good to update the services to use the new Jakarta EE 10 and MicroProfile 6.0 features, when they are released in Open Liberty (23.0.0.3).
