Changes:

use Nox to parametrize unit tests based on different versions of Python and Pydantic
split code quality checks into separate workflow
fix opensea code to include API key header in requests (tests are still failing in CI due to missing API key in GitHub)
change Pydantic versions to also allow <2.1
removed poetry.lock from repo
formatted code using latest version of Black

This is similar to #133 which will be closed if this PR is accepted.
