Updates Docusaurus to v3.3.2

Fixes #328

• Updates to latest Docusaurus release 3.3.2
• Converts docusaurus.config.js to be able to use ES modules and dynamic imports
• Updates dependencies needed (following migration guide)
• Since using yarn only for our build (but still optional for others to use npm as well, either/or), we need yarn.lock
• Updates .gitignore for dealing with yarn files not needed
