Update outdated jpetazzo/dind container which leads to errors when starting on Macs with newer Docker engine versions with officially maintained image

[x] Test without DNS changes
[x] Test within university network with adapted DNS settings

There are still references of engine-ia, engine-plan and jpetazzo/dind in

distributedSetup files
proxy/nginx.conf
docs/container-overview.md

Easy to spot using strg+f on the whole repository.
