Edits following dry run #39

Hi @stefaniebutland, these are the edits from our dry run! See what you think about the flow and completeness now. I will continue thinking about some overarching statements/illustration for preamable (see comments in lessons/index.qmd, although maybe it should be on index.qmd).

I'll check in with you/come back to this Tuesday late morning!

@stefaniebutland I did not add participants' names as headers to demo.qmd, I'll let you do that. Thank you!
