Wow - Aquile Reader looks great with my epub (I've spent an hour trying out various open-source solutions on Windows and it's shining beyond the others!). I'm glad to report this issue and hope it can make it even better.
I'm generating an epub with Quarto (quarto.org) but also in HTML and PDF, so I'm not sure entirely that the epub format is correct (but the others are acceptable). I've tried opening my epub in https://pgaskin.net/ePubViewer/ and it shows appropriate table widths (roughly 20% and 80% respectively) on this Table from section 11.2:
but in Aquile Reader 1.1.17 in Windows 10, the table looks like the widths are reversed:
