The docker image builds and appears to extract the files in the right place, but I could do with this reviewing for silly mistakes / typos before I merge it as any bug caused by getting it wrong will be subtle and probably won't be spotted for many months.

I used /root to be consistent with a previous thing (now removed) where I happened to use /root/.

No particular reason basically.
