Cover all the different DataSets, including how to modify them efficiently.

This one needs a ton of work because the conceptual underpinnings of data sets (especially function-based vs data-based) is not yet documented. That very likely means I haven't thought through it, either. Beware: conceptual refactoring of the plotting library may be spurred by working on this.
