Update editorial board

• It would be great if we could add a link to our group pages. I.e. to change to **[Matthias König](https://livermetabolism.com)**
• The table does not render well in the documentation (because it is not dynamic, see https://petab.readthedocs.io/en/latest/editorial_board.html), perhaps a list would be better (similar to the former editors), this makes it also easier to shift the rows from current to former and the other way on updates
• The editorial board is not mentioned in the readme (https://github.com/PEtab-dev/PEtab). It would be nice to add a sentence about the editorial board in the README with link to the board site in the docs.

I can make the updates if you give the go ahead.
