Thanks for this PR @benlangfeld

I don't see any new tests so it's hard to tell if these changes actually work. Would you mind adding to the relevant tests in test/?

You can run the test suite yourself by creating a .env file with the SPEECHMATICS_USER_ID and SPEECHMATICS_API_KEY variables.
