Update documentation #209

This is based on Carsten's installation documentation update: https://github.com/PaNOSC-ViNYL/SimEx/pull/203#partial-pull-merging

It includes the following main changes:

  1. Change to ReadTheDocs theme
  2. Remove the EUCALL logo and change project name to 'SIMEX Platform'
  3. Clean up heading levels, especially in installation chapter
  4. Replace the deprecated stickysidebar with sticky_navigation

Hi Carsten @CFGrote, I've cleaned up your previous pull request. Could you please comment on that? We can then add Calculator documentations based on that if you agree.
