Rename "/pass-the-pen/" folder to be "/community/", Move to it's own folder outside of "/docs/"

Community writing projects need their own space outside of the "docs" folder. This folder will contain any and all collaborative writing projects that spawn out of "Pass the Pen" live events or become sponsored by PageDAO to write.

Currently this folder is located in https://pagedao.org/**docs**/Pass-the-Pen/{BOOK-TITLE}/{CHAPTER-NAME}

New file structure should be "https://pagedao.org/community/{BOOK-TITLE}/{CHAPTER-NAME}.md"

Finally, update the header link to reflect this change.

QUESTION: Should we create an alternate github repo for "Space Pirates Psychedelic Booty"? This repo would only be used by writers, editors, artists, ect (not devs) for the sole purpose of writing a novel to be a NFTBook. Curious what that might look like and how we could integrate it on our website... Perhaps like how Docusaurus does their "showcase" (https://docusaurus.io/showcase) ?
