I've just installed Thunderbird from Flathub Beta, and it uses the same icon name (org.mozilla.Thunderbird
) for an icon, unfortunately. Did you get the info from the .desktop file?
Okay, the .desktop file in your link uses thunderbird-beta
: https://aur.archlinux.org/cgit/aur.git/tree/thunderbird-beta.desktop?h=thunderbird-beta, so it makes sense to create an icon.
Microsoft Edge Beta icon uses non-Papirus font, see:

I'm not sure about a font because of licenses, but you can draw any pixel-alignment letters for an icon, or use letters from existing icons.
New version. I've used the letters from MS Edge icon.
