refactor!: move to monorepos #39

So! I have been thinking of migrating the template structure to resamble a monorepo This could help a lot when doing stuff with multiple versions of the modpack, e.g. when you have a fabric and quilt version of your pack

The other improvement this would yeild is that in general this would make mc-modpack-kit hell a lot more modular
