Revive the VALIDATOR_OUT e2e test #65

Last known status:

removed from CI
fails locally (logs https://gist.github.com/levicook/c057c924d42e77833c1bceba4ad61334)

Definition of done:

[ ] make e2e_validator_out runs the test to completion and exits cleanly
[ ] VALIDATOR_OUT is added to the test_type matrix in .github/workflows/integration-tests.yml
[ ] CI runs this test and passes

This is happening because the we're removing gravity0 from our dockertest.Pool (somewhat intentionally) ;; but the test_runner is connecting to it for queries. I think the likely fix for this is to remove gravity1 instead.
