You can sacrifice one creature to emerge, reducing that spell's cost by that creature's mana value
What is the actual behaviour of the card?
When casting a spell with emerge, you can undo the sacrifice. That causes the spell's cost to be reduced by the creature's mana value, but lets you sacrifice a creature again to reduce the cost further. Creatures sacrificed in this way won't trigger their death triggers or leaves the battlefield triggers.

The abilities that would trigger when the sacrificed creature leaves play (Fiend Hunter) don't trigger either. The timed abilities (Kitesail Freebooter) work correctly.
