Added a contents to README as it is getting quite big!

Sure. I was wondering if this should be a separate file but I think your purely for the "needed to get this set-up" situation assessment is correct so I have also moved the resource links and Athena documentation links into a new resources and learning file, all linked from the README for ease of use. I think this is correct but am open to suggestions.
