Mimetype without libmagic #51

Experiment with getting the mimetypes without using libmagic.

We're using libmagic differently from OpenGPTs, but this PR might be useful to review beforehand: https://github.com/langchain-ai/opengpts/pull/327

I believe there are other things with higher value so moving this back to the ready column and changing priority to P1.
