There are different options, depending on your specific needs and what you would like to document. Yeah, protocols.io would be a good starting point. Otherwise or additionally, you could also do an open lab notebook on github and upload materials to the OSF page of your project. That being said, my perception is that protocols.io targets the reproducibility of your project, that is describing steps from raw data to final results in detail (e.g., data preprocessing, statistical analyses, visualization, etc.). So, having more than "one thing" is feasible and valuable.
