I think making an enclosure out of wood with a waterproof top would protect the enclusure from rain while also letting moisture in and out. Then a small resistor can be used to heat the inside of the enclosure as well. Here is a link found be @AcrobatBird that gives a lot of insight of stuff like this https://forum.arduino.cc/index.php?topic=129212.0
Ended up using a junction box. In particular this junction box: https://www.amazon.ca/gp/product/B075DG55KS/ref=ppx_yo_dt_b_asin_title_o02_s00?ie=UTF8&psc=1
The Arduino and senors will be outside in temperatures dipping down as low as -45 C :snowflake:. There is also going to be large temperature fluctations between night and day, so that will bring up the problem of condensation.
