Run coverage CI on Ubuntu 24.04 #56

Since Rolling is now on Ubuntu 24.04, I believe this is needed to fix the coverage CI build.

The tests will fail until #54 is also merged.

@sea-bass Do you mind adding this commit to https://github.com/PickNikRobotics/ros2_robotiq_gripper/pull/54? I don't have the right to bypass branch protection and this way we'd be able to just merge the two changes once CI is green
