Hello,
I'm currently using Big Sur on my hackintosh, thanks a lot for your work !!!
I wanted to test if the intel drivers of the integrated bluetooth chipset still worked on Big Sur.
So I tried to modify the config.plist, adding what was needed to load the necessary kexts, and I put the kexts back in the right folder.
The bluetooth is functional, like under Catalina.
I first had a pairing bug where the phone wasn't visible, but it could pair with the hackintosh without any code. But afterwards, when I restarted the pairing from the Hackintosh, a code was requested, and everything was paired without any problem.
Big Sur's config.plist works in theory without problems with the IntelBT branch.
Don't hesitate if you need further testing, like some functions I didn't test with bluetooth, to see if it holds up well.
