Tracking plans #55

Often customers don't know what they want/need to track. We should document some tracking plans in a similar vein to https://segment.com/academy/collecting-data/how-to-create-a-tracking-plan/ - to be used in our docs and as a next step from demos.

Note that we have a plugin for Avo which is a company specializing in this - we've also done some light collaboration with them in the past. If that's of any interest.

Related to this, there has been discussions around taxonomy (see also https://github.com/PostHog/posthog/issues/3228), if we described names for folks to use for standard steps, then we could create funnels, dashboards etc for them automatically.

May be worth basing plans on the ICPs we have too.
