Add an initial implementation of the Schema field of the Components Object #2

Basically follow what is specified in the OpenAPI spec.

Basic completion roadmap:

[x] Create the function with the schema structure
[x] Adapt the PostgREST SQL query to get all the tables and columns
[x] Add PostgreSQL composite types as objects in the exposed schema
[x] Show at least description, type and format as component properties
