Create an arena that has obstacles which the robot must avoid. The arena could be a cardboard box to emulate four walls connected by a floor. The obstacles could be make up of smaller boxes/toilet rolls etc. Could implement audible obstacles too? Use a phone playing some music etc.
Use mics to "listen" for objects as well as ir detectors to "sense" objects. In demo we could blow towards the robot and it would move away, or set up a phone playing music and the robot would move away from it?
