I think we should keep and continue to accept the old key without just replacing like this. Seems the vanilla 1.20 server is also accepting both keys.

Actually, this seems like it may not be possible as the authentication server won't be signing with the old key anymore. Vanilla clients pre-1.20 are also joining as offline mode, so we can't do much there for compatibility.
