You install + configure dkim-exchange on the servers you have configured as Source Servers for the Send Connector(s) you're using for outbound mail and want DKIM signed.
To find the Source Servers for a Send Connector(s): EAC: Mail Flow > Send Connectors > select + edit Send Connector > Scoping > Source Server Powershell: Get-SendConnector | select Identity -expand SourceTransportServers | select Identity, Name
