How much should an observer be able to view / do?

Definitely need to remove observers from the quiz and lab grading lists!

Observers should be able to view quizzes and labs, but not take them

Observers should not be in the list for grading quizzes and labs

When taking attendance the absent list should show the role (like observer, student, assistant, instructor)

This is done in the latest commit.

For attendance observers have been completely removed from the list
