Update Student Lab / Quiz as Instructor #65

After lab/quiz closing students sometimes send an update through Teams when they just missed closing.

Other times there are simply small mistakes in their work (like not turning on MarkDown) that would be nice to fix.

As such it would be good for instructors to be able to edit a lab for a specific student.

Latest commit adds this for both quizzes and labs (I had actually already done labs about a week ago)
