Update for Gateway v1.1.0

Description

As a developer, I would like to have the example code working with the latest version of the Gateway services.

• [ ] Update OpenAPI specs to the latest published in Gateway v1.1.0
• [ ] Update any code that broke as a result
• [ ] Implement support for new endpoints if appropriate
