Remove Dependency #14

Originally this cookbook relied on a separate Github repository to provide the intake catalog used in the cookbook. This created maintenance issues. This PR removes the dependency issue by adding the catalog into the cookbook.

link-checker fails because the pull request adds a file to this repo that is linked to in the cookbook. This should be resolved on next PR.
