Update environment setup instructions to use mamba #26

The conda environment solver is really slow for the kerchunk-cookbook environment. Following on https://discourse.pangeo.io/t/mamba-mature-enough/3154, I think it would be good to update the instructions to use mamba. The only change to the environment file that should be needed for mamba to work is to add git for installing kerchunk from the GitHub repo.
