We removed the processing (regrid) notebook because it didn't fit with using planetary computer as a data source anymore. It was suggested instead that we could link to https://xesmf.readthedocs.io/en/stable/notebooks/Rectilinear_grid.html as a resource that covers cover a variety of use cases.
