Opening this PR as part of my pre-publication review (#5)

This PR includes two changes to the environment.yml file:

Manage as many packages as possible through conda-forge (this is the Pythia preference as it tends to reduce conflicts)
Pin Python version to < 3.12 (this was necessary to get everything working for me on a Mac M1 laptop)

Adding h5netcdf to the environment, as I found that was needed to run the notebook locally on my Mac laptop.
