Previous image didn't render, trying a new one.

@erogluorhan Last week I reached out to the author asking them for a thumbnail image. For now I'll remove the image all together.

Update: removed it. Now it's the default Jupyterbook image which looks a lot better than an image that won't render.

There is a failing link to https://geocat.ucar.edu/pages/contributing.html that I can deal with in #350
