Readme #59

I've completed an initial draft of the README for the publication process. I would appreciate it if you both could review it and let me know if there is sufficient detail to allow you to run the publication. Happy to expand if there are any areas you think need more information. I've not gone too heavy on the detail as the process isn't fully embedded so there are some things that could (and probably will, as these things do!) change once we get going, but I think there's enough to get us started for now.

My plan is to redraft this after we have done our first dummy runs by the end of the month (probably will make a couple of tweaks here and there in the interim) or once our first full cycle is out of the way and we have a better idea of how it will actually work in practice!

PS: I've deliberately not included the filepaths yet just in case they change!
