A official updated docker image for BedrockConnect, for Linux, and Windows (which I use) that would stream line it for me so I can run all my home server stuff in docker.

SOLUTION

How to use BedrockConnect on docker windows. Go to latest release and download the source code. Then cd to BedrockConnect/Docker then run docker compose -f docker-compose.yml build wait for to to build. Then it should work.
