Update pyam version #60

I don't know how we ended up with pyam==1.6, but this is two year old version gets installed when resolving the environment.yaml.

Meanwhile pyam is at 2.2.0 and we should update. However, this requires some syntax changes: https://github.com/IAMconsortium/pyam/releases
