drop the doc/ directory in doc_files for building rpm #286

The doc directory is no longer there and it fails building an rpm with this.

Hi @wpoely86

thanks for spotting that. Yeah I guess even though the directory was renamed to docs now, it probably doesn't make sense to include it with the RPM anymore, since its just some files that have to be further processed by mkdocs anyway to be useful :)
