The pages are served with: Content-Type:text/html; charset=utf-8 So this a duplication / unneeded meta?
Kudos for smörgåsbord though...
I guessed as much; problem is that contributors wanting to update text don't know this... Don't feel strongly, but so long as it doesn't cause a problem, why not leave it in?

Certainly. I'm a relative naïf when it comes to github collaboration, I'm afraid!
While adding a playful update to "internationalise" the spelling of smorgasbord, I realised that I didn't know what encoding the pages were. Just to show willing, this PR adds an explicit UTF-8 charset header to each and includes the smorgasbord update.
AFAICT, none of the other pages needed re-encoding as such; I've merely added the explicit header.
