Fix a small mistake in definingmodels.rst #3730

Remove one "the" that was doubled in the text.

I'm not sure why the docs build fails. RTD changed some critical pieces of their build process, and Pyramid's docs rely upon Intersphinx to pull inventories from those projects to build these docs. We might need to update all the Pylons Project docs specified in our conf.py to use the new build process and try again.

Yeah we have to add a readthedocs.yml file at some point here.

Regardless - this PR definitely isn't an issue, going ahead and merging it. Thank you for the contribution!
