My experience is more like the opposite. You get huge amounts of gold which you don't need to spent. At least mid to late game. Same for lockpicks. You find way too many so even a thief is not that useful. I even planned to reduce the amount.
But beside that the merchant slots are part of the savegame data. Extending the slots would make savegames incompatible.
In general you can just buy two slots free and sell all items of a given kind to earn much money. If you sell the same item at the same merchant and always keep one slot free, you can basically sell without limit.
As I try to think about that more objectively, I begin to believe that you're eventually right; with the lock picks "issue", at least. Maybe my current own gaming progress does affect my opinion here way too much. I feel kind of sorry that I generally disagree about the trading skots, but if that really is tied so tightly to game saves, then I understand your point.
Err; how about adding some thieves available to tte party..?!
I recall writing of this topic before; but anyway I thought I must write this:
You will find plenty of many kinds of items during the game; but not so much gold relatively. Thus many items are very expensive to buy.
Some additional free item slots should be added at merchants, to ensure some trade option (especially, to enable some selling!) at points when your party has no gold left, and the main portion of all the gold available to be found/earn has been already taken.
Additionally, there are some items that are vital to the overall progress, but are relatively difficult to get; especially the Lockpicks.
I think the total amount of lockpicks available should be slightly increased.
