Improve infrastructure diagrams

34 added some preliminary diagrams but these are not final. Diagrams are great to create a visual image of what's out there, which seems handy in conda-forge, given the amount of moving pieces we have.

I started a mindmap diagram with mermaid to provide this mental model of all the infrastructure (without relationships, just the inventory). You can see it here:

Once we have that I guess we can start breaking it down in chunks, with each chunk having the relationships between elements when needed.
